tubettini cozze

A variation on the classic dish of spaghetti or linguine with mussels, this is one of Puglia’s traditional seafood dishes and comes from Taranto.


Ingredients (serves 4) :

350 g tubettini rigati
1 kg mussels  
200 g tomatoes  
2 cloves garlic
4 tablespoons extra virgin olive oil
fresh parsley
salt and pepper


Method:

First shell the mussels, removing the flesh in one piece. Gently soften the garlic in the hot oil, then add the tomatoes and the filtered water from the mussels. Cook the mixture for about 10 minutes, then add the cleaned mussels and continue cooking on a low heat for a few minutes. Cook the tubettini in plenty of salted water and drain when al dente. Add the pasta to the mussel sauce and continue cooking until ready. Serve with chopped parsley and a pinch of freshly ground black pepper.  
Tip: The sauce should be pinkish-red and a little watery.
