Although Galatina includes other communes in the province of Lecce, the denomination is an homage to the “the city of the owl,” as Galatina is known, from the image on its communal coat-of-arms, which is eloquent evidence of its ancient origin as a Greek colony dedicated to the goddess Minerva. The Galatina red relies on Negroamaro for a minimum of 65% of its blend, which rises to 85% if the label bears the name of the variety; it may bear the term Riserva after a maturation of 24 months, of which 6 must be in large oak ovals. Chardonnay predominates in the whites, at a minimum of 55% in blends and at 85% if listed on the label.
