
Aleatico di Puglia is the only DOP that covers the entire Region of Puglia. The production code specifies that suitable soils are those that are limestone-clay-silica in nature, deep and fairly dry, and with good exposure; those that should not be utilised are predominantly clay or overly-moist alluvial soils. There are only two categories of wine, Dolce Naturale (naturally sweet) and Liquoroso Dolce (sweet fortified), both containing a minimum of 85% Aleatico, with allowed additional amounts of Negroamaro, Malvasia Nera, and Primitivo. The Dolce Naturale version must have a finished alcohol of 15% and the Liquoroso Dolce Naturale 18.5%. Finally, the yield of grapes to must can never exceed 65%, and the wine must mature for a full three years to be designated Riserva.
